I've had a bottle of red wine open for approx 6 weeks. I am making a stew that requires 1/2 a bottle of wine, would the wine i have be ok to use or should i buy some more? How long should it be ok once a bottle has been opened?|||My bartender said the cooking wine and drinking wine are two different things. He said if that bottle of red wine has been open that long with closing the cap then it has no alcohol in it now. But he said if you open and drink some then recap it and stick it in the icebox then it will be fine to use now. He said if it was sating at room tempuature all this time then it will be damage and the alcohol would be done...he said to pour a small amount in a glass and do a wine taste thing on it and see if it still has body.|||Take a taste. If the wine is okay to drink, it is okay to cook with! Just remember, the flavor of the wine will concentrate as the meal cooks.
